We put the FUN in Funnel Cake











Who likes fun? I mean literally who likes carnivals, and amusement parks, and county fairs in the summer or fall with outdoors concerts? All these things I think of when I think of funnel cakes. Yesterday, we spent the day with some friends and among all the food trucks at Railroad Square you would think that there'd be a least one that served funnel cakes. We searched pretty much the entire night to no avail until finally someone said "It really shouldn't be that hard to find these, after all they are pretty easy to make". Bingo! Next recipe coming right up. It was doubly important because my poor roomie has never had funnel cake before...So here's how it went

Ingredients:
All of the ingredients were things that I pretty much already had in the house so once again this turned out to be a simple dish to prepare

(1 1/2 cups)Milk
(2) Eggs
(1/2 tsp)Cinnamon
(1 1/2 cups)Flour
(1/2 tsp)Baking Powder
(1/2 tsp)Vanilla Extract
Vegetable Oil (or whatever tasteless oil that you want to fry in)
Powdered Sugar (for the topping of course)

Directions:
1. Get a deep fryer or a pot and heat the chosen oil on the stove
2. Combine 2 eggs and the milk and whisk together
3. In another bowl, mix flour, cinnamon, and baking powder. Add the dry mix slowly into the milk and eggs and mix until smooth. Add vanilla extract and sugar to taste if necessary 
4.  Pour mix into a funnel while keeping your finger over the end
**Now I didn't have a funnel so I used a plastic bag and just cut a hole in the corner. Or you could even use a spoon and ladle it in. Just the ability to make certain shapes suffers a bit**
5. Start from the center in a swirling motion to make a 6 or 7 inch round. Fry on both sides until golden brown. 
6. Remove and drain on paper towels. Sprinkle with confectioners' sugar and serve warm.
